This Braised Beef & Mushroom dish features juicy flank steak and succulent bella mushrooms, paired with choy sum and seasoned to perfection. The beef is marinated and cooked using a technique that ensures it's tender and flavorful. The dish is finished with a savory sauce and served with rice, making it a hearty and delicious meal.
Prepare ingredients. Slice beef into small pieces. Marinate with baking soda, cooking wine, soy sauce, white pepper, corn starch, water, and oil for 10 minutes.
Clean & cut mushrooms and choy sum.
Stir fry or cook beef in hot oil. This cooking technique is called 'run thru oil,' which helps the meat cook thoroughly. Set aside when it’s 90% cooked.
In the hot pan, add oil and 1/2 tsp of salt. Add mushrooms, black pepper & cooking wine to enhance the flavors and release the excess moisture in the mushroom. Drain off the excess water & set aside.
Add oil and 1/2 tsp of salt. Stir fry choy sum. Cover and let it cook for a few minutes, which helps the veggies release their excess moisture. Drain off the excess water & transfer to serving plate.
In a clean pan, fry garlic until aromatic. Stir fry mushroom and beef.
Add water for the sauce. Season with oyster sauce and soy sauce. Slowly stir in cornstarch slurry.
Let it simmer, toss, and pour over choy sum.
 Enjoy with rice.
