Chicken & Mushroom Claypot Rice

1: Wash rice. Rinse it with water 2 times or until the water is clear.

2: Brush oil on the bottom of the claypot.

3: Transfer rice and water to the pot. Cook rice.

4: Marinate chicken using the marinade. Mix in cornstarch and oil to give it a velvety texture.

5: Stir fry chicken and mushrooms with ginger until 90% cooked. Remove ginger.

6: Add chicken and mushrooms to the rice when the rice dries. Cover & let it cook.

7: Make the sauce. Fry shallots and cilantro. Add in the pre-mixed sauce & let it simmer for a few minutes to take in the shallots and cilantro flavors. Strain the special soy sauce & remove the shallots and cilantro.

8: Top the rice with fresh cilantro and pour sauce over the rice.

9: Enjoy! And if you like, eat the fan jiao (crispy rice) when you’re done eating.
