29 fl oz chicken broth

water

29 fl oz water

shiitake mushrooms

1 shiitake mushrooms

egg white

½ tbsp egg white

salt

⅛ tsp salt

shaoxing wine

½ tbsp shaoxing wine

chicken bouillon powder

1 tsp chicken bouillon powder

corn starch

½ tbsp corn starch

sesame oil

1 tsp sesame oil

white pepper

⅛ tsp white pepper

dark soy sauce

1 tbsp dark soy sauce

Instructions

1: Prepare ingredients. Rehydrate shiitake mushrooms & soak vermicelli. Crack two eggs & remove yolks (we only need the whites). Cut chicken & marinate.

2: Boil a pot of chicken broth & water.

3: Add mushrooms. Bring it back to a boil, and slowly add in chicken. Note: use chopsticks to make sure it doesn’t get clumped together.

4: Season with chicken bouillon to enhance the flavors, and add dark soy sauce for color and more flavors.

5: Slowly stir in tapioca starch slurry to thicken the broth while it’s simmering. Stir in egg whites.

6: Drizzle in sesame oil and pepper powder for more flavors (optional).

7: Serve & enjoy!
