Measure, wash & cook rice. (Note: the water ratio is 1:1).
Pound the pork chop to tenderize it. Marinate it with soy sauce, oyster sauce, shaoxing wine & white pepper. Mix in cornstarch and oil to lock in the moisture & tenderize it. Let it marinate for 10-15 minutes.
Prepare the special sauce. Add soy sauce, oyster sauce, wine, fish sauce, sugar, and water in a bowl. Mix well.
Prepare eggs. Add 2 eggs, cornstarch, milk, and a pinch of salt in a bowl. Whisk together.
Pan fry the pork chop. When it’s golden brown & crispy, flip it over. Set it aside & let it cool down.
When the rice is cooked, scoop rice onto a plate.
Fry eggs. Place it over the rice. Cut pork chop and top it on the rice. Drizzle special sauce over the rice. Sprinkle scallions.
 Enjoy!
