A delightful dish featuring savory and tart steamed ribs in a plum sauce, perfect for a hearty meal. These pork back spareribs are marinated with a blend of spices and cooked to tender perfection.
Cut the rack of ribs into small pieces and transfer to a large bowl.
Use cold water to wash and rinse the ribs, then soak in water with vinegar and salt for 15 minutes to remove any gaminess.
Rinse and soak dried pitted plum meat in water, then chop into fine pieces and set aside.
After soaking the ribs, drain out the water and pat dry.
Season the ribs with white pepper powder, sugar, chicken bouillon powder, and shaoxing wine. Mix well, then add cornstarch, bean sauce, dried plum, ketchup, sugar, and soy sauce. Drizzle sesame oil and mix again.
Transfer to a shallow bowl and steam for 30-40 minutes until fully cooked and tender.
 Enjoy with rice!
