Sweet & Sour Spare Ribs

1: Add water to a large bowl. Add ribs. Add vinegar & salt. Soak spare ribs for 15 minutes to clean & reduce gamey flavors.

2: Cut scallion whites & slice ginger. Soak dried plum meat in water to rehydrate.

3: Drain the water and dry the ribs. Marinate it with salt, wine, soy sauce & white pepper. Add cornstarch & oil to velvet the ribs.

4: Heat up a hot pan with a generous amount of oil. Sear the ribs until the edges brown. When the ribs are about 70-80% cooked, remove the ribs and set aside.

5: Fry ginger, scallions, and star anise until aromatic. Add sugar and cook until the sugar melts. Add oil. Add the ribs back in. Add soy sauce & oyster sauce. Mix well.

6: Add water to help cook the ribs. Add plum meat, white vinegar, and dark soy sauce. Cover and cook over medium-high heat for about 15-20 minutes or until tender.

7: Open the lid. Let the sauce reduce & thicken. Give it a few tosses.

8: Serve & enjoy.
